I know that 90% of my recipes involve chocolate but I can’t help it, I like it too much. As long as it’s dark or cacao and I’m done for. Also, is there possibly a better flavor than chocolate + oranges? Maybe with a dash of cinnamon? There. I found some random sad amaretti cookies (not vegan) in my pantry and decided to throw them in, too. You can skip them no problem.

CHOCOLATE BUNDT CAKE WITH HOMEMADE ORANGE MARMALADE AND AMARETTI {vegan except amaretti}

Recipe
one 26-cm bundt cake
Cake
1 cup / 120 gr wholegrain flour
1 + ½ cup / 200 gr AP flour
60 gr cacao powder
2 tbsp baking powder
1 tbsp baking soda
pinch salt
1 tsp cinnamon
1/3 cup / 80 ml light oil
2 cups / 500 ml plant-based milk
orange marmalade (see recipe below)
seeds from 1 vanilla pod
a generous handful dry amaretti (about 12), crushed (non-vegan)
Method
- Preheat oven to 350°F/180°C.
- In a large bowl sift and mix the dry ingredients; in another bowl mix liquid ingredients and pour over the dry ones. Mix very well with a spatula, then pour into a well-oiled springform bundt pan.
- Bake for 30 minutes or until a clean knife inserted in the middle comes out clean.
- Remove from oven and let cool on a rack. When cooled, remove from pan and serve either side up!
- Store in the oven at room temperature or elsewhere, covered. Also in the fridge to keep the moisture!
Marmalade
3 oranges with thick peel
125 gr cane sugar
Method
- Wash oranges very well, better if using baking soda.
- Squeeze them and pour the juice (you must yield 275ml) into a pot. Finely chop and slice the peel of 2 oranges. If some pulp sticks to the peel it’s fine!
- Add peel to the pot along with sugar, bring to a boil, then lower the flame and let simmer for about 30 minutes, stirring often, until it becomes marmalade. Remove from the stove and let cool.
