I have had a few very busy weeks (and more to come) but I still wanted to post a new recipe. I thought I’d come up with something uber simple and quick, something a bit different from my usual creations: these easiest and melt-in-your-mouth 2-ingredient chocolate truffles. The most versatile and 100% customizable snack!! I generally wouldn’t make something using an ingredient such as chocolate as a main ingredient, I’d create everything from scratch, but I thought why not, I’ll do something really really simple and straightforward for once! I love these truffles as they are but it would be fun to add nuts and spices. Let me know if you try any variations!!
P.s. due to lack of time I wasn’t able to make step-by-step photos for this but truth is you won’t need them 😀
EASIEST 2-INGREDIENT CHOCOLATE TRUFFLES {vegan + gluten free}

Recipe
about 10-12 truffles
prep time: 10 mins, cook time: 0 mins, total: 10 mins + 2 hrs in the fridge
150 gr chopped dark chocolate (I used 80%)
1/3 cup / 85 ml coconut milk from a can (shake well)
optional: pinch salt, cocoa powder
Method
- Finely chop chocolate and let melt over a double boiler.
- Heat up coconut milk over a low flame (don’t let it boil).
- When chocolate is melted pour very hot coconut milk over it (optional: and a pinch of salt), then, without stirring, cover and let sit for 5 minutes. Gently sir, then transfer bowl to the fridge, uncovered, and let firm up for 2 hours.
- Using a metal spoon, scoop out a little bit of chocolate mixture and form into a ball between your palms. Place on a container or tray lined with parchment paper. If desired, roll in cocoa powder or other powder (cinnamon, matcha, etc). Continue with the rest.
- Eat as is or let sit in the fridge for another hour or two to let firm up even further. Store in the fridge in a sealed container.
