Here’s another of my super easy, super simple, super delicious recipe ideas – apple crumble! I call it strudel crumble as I used all the classic strudel ingredients but call it what you prefer, I still think it’s the absolute best flavor combo ever! This recipe is completely customizable so feel free to use whatever fruits and spices. Maybe pair it with some vanilla ice cream?!
P.S. I will definitely make a real strudel ASAP.
STRUDEL CRUMBLE {vegan + gluten free}

Recipe
serves 6
prep time: 10 mins, cook time: 35 mins, total: 45 mins
Filling
5 apples (any kind)
zest of 1 lemon, grated
juice of 1 lemon
juice of 1 orange
cinnamon (sticks and/or powder)
vanilla
nutmeg
sweetener of choice
handful raisins
handful toasted almonds, slivered
Crumble
1 cup / 120 gr oats
¼ cup / 35 gr rice flour
cinnamon
pinch salt
3 tbsp honey or other sweetener
3 tbsp coconut oil or other light oil
1 tsp brown sugar
Method
- Peel apples and slice thinly. Add to a medium pot together with lemon zest, citrus juices, spices and 1 tbsp of preferred sweetener (start with 1 tbsp and add more at the end if necessary).
- Set over medium heat and, when the juice starts boiling, reduce heat, cover and let simmer until apples are just soft, about 10-15 minutes depending on apple variety. Add raisins and almonds at the very end.
- In the meantime prepare the crumble. Take half of the oats and grind them in a blender, to make oat flour. Add all crumble ingredients except the brown sugar to a mixing bowl and mix very well. If the coconut oil is solid, mix with your hands. The mixture must hold together when pinched; if it doesn’t, add a little bit more oil.
- Preheat oven to 350°F/180°C.
- Transfer cooked apples to a medium-sized baking dish (mine was 13x23cm) discarding the cinnamon sticks. Top with the crumble, distributing it evenly. Sprinkle the brown sugar on top.
- Cook for 20 minutes, then turn on grill for about 2-3 minutes (watch carefully as it will burn very fast!!)
