During this summer I wasn’t able to keep up with the blog much, but here I am now with new recipes 🙂 (Un)fortunately I only have sweet recipes for a while, so if you were looking for something savory, you gotta wait 😀 I will start with these yummy and super easy soft cookies made with very few ingredients, including homemade almond butter and dark chocolate. Satisfaction guaranteed. Try them!!
SOFT CHOCOLATE CHIP COOKIES {vegan}

Recipe
about 15 large cookies
prep time: 10 mins, cook time: 20 mins, total: 30 mins
1+ ½ cups / 200 gr flour of choice
½ tsp baking powder
½ tsp baking soda
1/3 cup / 65 gr brown sugar (or more, to taste)
pinch vanilla
pinch salt
½ cup / 125 ml plant-based milk
100 gr almond butter (made from 1 cup / 100 gr almonds — see recipe here)
60 gr dark chocolate, roughly chopped
Method
- Preheat oven to 350°F/180°C.
- Add all dry ingredients to a bowl, stir well, then add milk and almond butter. Mix to incorporate.
- Line an oven tray with parchment paper and create the cookies by taking a walnut-sized amount of dough and rolling it between slightly wet hands.
- Bake for 20 minutes. Take the cookies out of the oven and let cool.
- Store cookies in an air-tight container.
