If, by now, you are thinking: “hmm, she must be obsessed with matcha+chocolate…” then why, yes, you are absolutely correct. And I will use this combo in many more recipes to come! (hope you are happy about that) They are simply a match made in heaven! These cookies are super duper simple, just please note one important thing: if you want them to have a bright green color, you must use AP flour and white or light brown sugar. I normally wouldn’t use either but for once they are needed 😉
SOFT MATCHA COOKIES W/ CHOCOLATE CHUNKS {vegan}

10 cookies
prep time: 10 mins, cook time: 15 mins, total: 24 mins
¾ + 1/8 cup / 120 gr AP flour
2 tsp matcha
1 tsp baking powder
¼ heaping cup / 60 gr white or light brown sugar
pinch salt
3 tbsp light oil
4 tbsp plant-based milk
seeds of ½ a vanilla pod
a small handful of roughly chopped dark chocolate
Method
- In a medium bowl add the dry ingredients: flour, matcha, baking powder, sugar and salt; whisk. Add oil, milk and vanilla and mix with a spatula to evenly combine. Add chocolate chips. At a certain point you will need to knead a bit with your hands (inside the bowl) until you form a ball.
- Preheat oven to 180°C/350°F.
- With slightly wet hands form small balls, flatten them and line them up on a baking dish lined with parchment paper.
- Bake for 13-15 minutes (it will depend on how big you made your cookies), remove from oven and let cool.
